So dinner last night was GREAT! however we were so rushed it seemed a little unmeshed. But non-the-less Panko Crusted Chicken breast sliced into “nuggets” for the kiddos. The veggies are in the sauce, by mixing 2 eggs with a 1/2 milk, (or cream or water) a cup of baby spinach and green onions chopped teeny the kids never know… a T of lime juice blend with a fork until it looks like soup. Place the chicken “nuggets” into the mix until coated then in a separate bowl place 3 c of Panko crumbs, 2 T of flour and as much feta as you like and coat the chicken pieces one by one then place onto a cookie sheet and into the oven at 400 for 25-35 mins.
For dessert…. Mint Chocolate Brownies (divineness)
